A custom quarter weighs about 75 pounds and encompasses cuts from both the front and hind quarters, offering you a diverse range of options to enjoy.

Please note that due to popular demand, Liver, Oxtail, Tongue, Heart, as well as Flank and Skirt steaks are not available in quarters due to their limited availability, but they are available for you to select in halves and wholes, or you can add them to your order as individual cuts.
